Ekmek? Bira? Patates? Enfes tatl\u0131lar? Gelin bu geni\u015f mutfa\u011f\u0131 biraz daha yak\u0131ndan tan\u0131yal\u0131m. K\u00f6keni Do\u011fu Almanya (eski Alman Demokratik Cumhuriyeti) mutfa\u011f\u0131na dayanan bu mutfak, Bat\u0131 Almanya (Almanya Federal Cumhuriyeti) mutfa\u011f\u0131n\u0131n da katk\u0131s\u0131yla b\u00fcy\u00fcm\u00fc\u015ft\u00fcr. Do\u011fu Alman mutfa\u011f\u0131 genel olarak Do\u011fu Avrupa \u00fclkelerinden (Rus, Macar gibi) etkilenmi\u015ftir. Bu \u00fclkelere giden Do\u011fu Almanlar ve bu \u00fclkelerden Almanya\u2019ya gelen g\u00f6\u00e7menler arac\u0131l\u0131\u011f\u0131yla yemek ve k\u00fclt\u00fcr al\u0131\u015fveri\u015fi tarih boyunca s\u00fcrekli olarak geli\u015fmi\u015ftir.<\/p><p style=\"text-align: justify;\">G\u00fcn\u00fcm\u00fczde Almanlar, y\u00f6resel mutfaklar\u0131n\u0131 \u00fc\u00e7 grupta toplam\u0131\u015ft\u0131r : Th\u00fcringia, Saksonya ve Saksonya-Anhalt. Th\u00fcringia, Orta Almanya\u2019da yer alan bir eyalettir. Ba\u015fkenti Erfurt\u2019 tur. Ormanlar\u0131n bol oldu\u011fu bu eyalet ayn\u0131 zamanda Almanya\u2019 n\u0131n en iyi avc\u0131l\u0131k alanlar\u0131ndan biridir. Bu b\u00f6lge \u00e7e\u015fitli et yemekleri ve farkl\u0131 \u015fekillerde haz\u0131rlanan sosis (wurst) \u00e7e\u015fitleriyle de bilinmektedir.<\/p><p style=\"text-align: justify;\">Saksonya, Almanya&#8217; n\u0131n do\u011fusunda yer al\u0131r. Eyaletin Ba\u015fkenti Dresden\u2019 dir. \u00c7ek Cumhuriyeti s\u0131n\u0131r\u0131na yak\u0131nd\u0131r. Kuzeyde Brandenburg ve Berlin, g\u00fcneyde Bavyera ile kom\u015fudur. Eyalette sebze yeti\u015ftiricili\u011fi, \u00fcretimin b\u00fcy\u00fck bir k\u0131sm\u0131n\u0131 kaplar. Ayr\u0131ca burada kahve de olduk\u00e7a pop\u00fclerdir.<\/p><p style=\"text-align: justify;\">Saksonya-Anhalt olarak adland\u0131r\u0131lan Eyaletin Ba\u015fkenti Magdeburg \u2018tur. Ba\u015fta domuz eti olmak \u00fczere biftek ve k\u00fcmes hayvanlar\u0131n\u0131 olduk\u00e7a fazla kullanmaktad\u0131rlar. K\u00fcmes hayvanlar\u0131 i\u00e7erisinde en yayg\u0131n t\u00fcketileni ise tavuktur. Etler genellikle rosto, Schnitsel veya yahni \u015feklinde yenilir. Macarlar\u0131n etkisiyle Alman mutfa\u011f\u0131na ge\u00e7en et yahnileri (Gulasch) denenmesi gereken tatlar aras\u0131ndad\u0131r. Av etlerinden domuz,tav\u015fan ve geyik y\u0131l boyunca bulunabilen et t\u00fcrlerindendir. Alman mutfa\u011f\u0131n\u0131n vazge\u00e7ilmezleri aras\u0131nda sosis (Wurst) \u00e7e\u015fitlerini sayabiliriz. Almanya\u2019da Bratwurst, Currywurst, Knackwurst, Bockwurst ve Wei\u00dfwurst ba\u015fta olmak \u00fczere tam 1500 farkl\u0131 tipte sosis yap\u0131l\u0131r.<\/p><p style=\"text-align: justify;\">Bal\u0131k, Alman tariflerinde di\u011fer et \u00e7e\u015fitleri kadar yayg\u0131n de\u011fildir. Alman mutfa\u011f\u0131nda en \u00e7ok t\u00fcketilen bal\u0131k \u00e7e\u015fidi Alabal\u0131kt\u0131r. Levrek, Sazan ve Ton bal\u0131\u011f\u0131 da tercih edilen \u00e7e\u015fitler aras\u0131ndad\u0131r.<\/p><p style=\"text-align: justify;\">En pop\u00fcler sebzeler patates, lahana, havu\u00e7, \u0131spanak, \u015falgam, bezelye ve fas\u00fclyedir. Sebzeleri genellikle et veya bal\u0131k yemeklerinin yan\u0131nda garnit\u00fcr olarak tercih ederler. Alman mutfa\u011f\u0131nda en az et kadar \u00f6nemli bir yere sahip olan patates, Almanlar taraf\u0131ndan bir sebze olarak g\u00f6r\u00fclmez. Alman mutfa\u011f\u0131na 18. y\u00fczy\u0131l\u0131n sonlar\u0131nda giren patates, mutfa\u011f\u0131n olmazsa olmazlar\u0131ndand\u0131r. Patates en \u00e7ok tuzlu suda kaynat\u0131larak t\u00fcketilir. Kartoffelp\u00fcree (Patates p\u00fcresi), PommesFritesyada k\u0131sa ad\u0131yla Pommes (Patates K\u0131zartmas\u0131), Kartoffelsalat (Patates salatas\u0131), Kartoffelkn\u00f6del (Patatesli hamur toplar\u0131), Kartoffelpuffer &#8211; Reibekuchen (Patates m\u00fccveri) ba\u015fta olmak \u00fczere bir \u00e7ok farkl\u0131 lezzetleri bulunmaktad\u0131r.<\/p><p style=\"text-align: justify;\">Alman Mutfa\u011f\u0131n\u0131n vazge\u00e7ilmezleri aras\u0131nda turta ve pasta \u00e7e\u015fitlerini saymazsak olmaz. En fazla tercih edilen t\u00fcrleri taze meyvelerle yap\u0131lanlar\u0131d\u0131r. Genellikle elma erik, vi\u015fne ve \u00e7ilek tatl\u0131 yap\u0131m\u0131nda kullan\u0131l\u0131r. Pop\u00fcler bir di\u011fer tatl\u0131lar\u0131 ise Quark peynirinden yap\u0131lan cheesecakeleridir. K\u00e4sekuchen olarak adland\u0131r\u0131lan bu tatl\u0131 olduk\u00e7a lezzetlidir. Quark peyniri krema k\u0131vam\u0131nda bir peynir t\u00fcr\u00fcd\u00fcr. Krem peynir ve s\u00fczme yo\u011furt kar\u0131\u015f\u0131m\u0131na benzer. Almanya\u2019 da her yerde bulunabilen Quark, maalesef T\u00fcrkiye\u2019 de haz\u0131r olarak sat\u0131lmamaktad\u0131r. Baden eyaletinin me\u015fhur pastas\u0131 olarak bilinen <a href=\"http:\/\/www.daszeitung.com\/karaorman-pastasi\/\" target=\"_blank\" rel=\"noopener noreferrer\">Schwarzw\u00e4lder Kirschtorte<\/a> kirazdan yap\u0131lan yine olduk\u00e7a bilindik bir pastad\u0131r. T\u00fcrkiye\u2019 de de benzer t\u00fcrevleri yap\u0131lan bu pasta, Kara Orman Pastas\u0131 olarak bilinir. Frankfurt&#8217; un ve Hessen Eyaleti&#8217; nin me\u015fhur pastas\u0131 olarak an\u0131lan Frankfurter Kranz,\u00a0ismini \u00e7elenk pastas\u0131 g\u00f6r\u00fcnt\u00fcs\u00fcnden al\u0131r. Bademli ve kremal\u0131 hafif bir pastad\u0131r. Apfelstrudel denen tatl\u0131lar\u0131 ise denemeye de\u011ferdir. \u00a0\u0130nce hamur i\u00e7ine sar\u0131lm\u0131\u015f meyvelerden olu\u015fan bu tatl\u0131y\u0131 yapmak h\u00fcner gerektirir. Baklava hamuruna benzer incelikte hamurlara bir bez yard\u0131m\u0131 ile rulo yap\u0131l\u0131p f\u0131r\u0131nland\u0131ktan sonra servis edilir. Olduk\u00e7a lezzetlidir. Mayal\u0131 hamurdan ya\u011fda k\u0131zart\u0131larak yap\u0131lan Alman \u00e7\u00f6re\u011fi\u00a0de mutfa\u011f\u0131n klasiklerindendir. Marmelat veya \u00e7ikolata sosu dolgulu bu hamur toplar\u0131n\u0131n ismi b\u00f6lgeden b\u00f6lgeye de\u011fi\u015fmekle birlikte \u00e7o\u011funlukla Berliner, Pfannkuchen, Kreppel veya Krapfen olarak bilinir.Tatl\u0131lar\u0131 kadar tuzlu hamuri\u015fleride olduk\u00e7a lezzetlidir. Simit hamuruna benzer bir hamurdan yap\u0131lan Bretzel, hem \u015fekli hemde lezzetiyle Alman mutfa\u011f\u0131n\u0131n bilinen tatlar\u0131ndan biridir.<\/p><h2>Alman Mutfa\u011f\u0131 ve Ekmek K\u00fclt\u00fcr\u00fc<\/h2><p style=\"text-align: justify;\">T\u00fcrk k\u00fclt\u00fcr\u00fcnde oldu\u011fu gibi Alman k\u00fclt\u00fcr\u00fcnde de ekme\u011fin olduk\u00e7a \u00f6nemli bir yeri vard\u0131r. Almanya, ekmek \u00e7e\u015fitlili\u011fi en fazla olan \u00fclkedir. Beyaz ekmekten kepek, \u00e7avdar, tah\u0131ll\u0131 ekme\u011fe kadar yakla\u015f\u0131k 600 adet ekmek \u00e7e\u015fidi bulunmaktad\u0131r. Ekmek konusunda Alman mutfa\u011f\u0131, Do\u011fu Avrupa&#8217;ya Bat\u0131&#8217;ya k\u0131yasla daha yak\u0131nd\u0131r. Bir\u00e7ok t\u00fcr ekmek hem bu\u011fday, hem de \u00a0k\u0131z\u0131l \u00e7avdar ununun kar\u0131\u015f\u0131m\u0131ndan elde edilir. Mischbrot denen bu ekmek \u00e7e\u015fidi sevilerek t\u00fcketilir. F\u0131r\u0131na verilmeden sadece buharda pi\u015firilerek elde edilen ekmekleri ise tok yap\u0131s\u0131 ve kendine has tatl\u0131ms\u0131 lezzetiyle dikkat \u00e7ekmektedir. Kepekli ekmek ve kar\u0131\u015f\u0131k tah\u0131llardan yap\u0131lan ekmeklerde olduk\u00e7a yayg\u0131nd\u0131r. Almanlar ekmeklerinde neredeyse her tip tah\u0131l\u0131 kullan\u0131rlar. Beyaz ekme\u011fin yerine Alman mutfa\u011f\u0131nda \u00e7o\u011funlukla esmer ekmek t\u00fcketilir.\u00a0 T\u00fcrk k\u00fclt\u00fcr\u00fcnde neredeyse her \u00f6\u011f\u00fcnde ekmek t\u00fcketilirken, Almanlar\u0131n ekmek t\u00fcketimi genellikle sabah kahvalt\u0131lar\u0131na ve ak\u015fam \u00f6\u011f\u00fcnlerine e\u015flik eder. \u00a0Ekmek demi\u015fken, Almanlar\u0131n tereya\u011fl\u0131 ekme\u011fe olan d\u00fc\u015fk\u00fcnl\u00fcklerine de\u011finmeden ge\u00e7meyelim. Saksonya\u2019 da Bemme, Berlin dolaylar\u0131nda Stulle, Ren b\u00f6lgesinde B\u00fctterken olarak bilinen Tereya\u011fl\u0131 ekmek (Butterbrot) bir Alman i\u00e7in muhte\u015fem bir g\u00fcn\u00fcn vazge\u00e7ilmez par\u00e7as\u0131d\u0131r. G\u00fcn\u00fcn herhangi bir saatinde aperatif olarak yenen bir dilim tereya\u011fl\u0131 ekme\u011fe olan d\u00fc\u015fk\u00fcnl\u00fcklerinin izah\u0131 ise \u00e7ok kolay! Yakla\u015f\u0131k 600 farkl\u0131 ekmek t\u00fcr\u00fcn\u00fcn oldu\u011fu bir \u00fclkede en sevilen yeme\u011fin ekmek olmas\u0131ndan daha do\u011fal ne olabilir ki!<\/p><p style=\"text-align: justify;\">Sabah kahvalt\u0131lar\u0131 ve ak\u015fam yemekleri genellikle sandvi\u00e7 \u015feklinde hafif \u00f6\u011f\u00fcnlerdir. Ak\u015fam ekme\u011fi manas\u0131na gelen Abendbrot, Alman literat\u00fcr\u00fcnde Ak\u015fam yeme\u011fi anlam\u0131nda da kullan\u0131l\u0131r. \u0130simleri Br\u00f6tchen, Semmel, Schrippe, Rundst\u00fcck veya Weckle olarak bilinen minik yuvarlak ekmek\u00e7ikler Alman mutfa\u011f\u0131nda \u00f6nemli bir yere sahiptir. \u00c7o\u011funlukla bu yuvarlak minik ekmek\u00e7ikler, enden yar\u0131ya kesilip her iki tarafa tereya\u011f\u0131 yada margarin s\u00fcr\u00fcld\u00fckten sonra\u00a0 salam (Salami), \u00e7e\u015fitli peynirler eklenerek sandvi\u00e7 haline getirilir. T\u00fcrklerin be\u015f \u00e7ay\u0131 gibi Almanlar\u0131n Kahve molalar\u0131 da me\u015fhurdur. G\u00fcn ortas\u0131nda i\u00e7ilen bir fincan kahvenin yan\u0131na \u00e7o\u011funlukla pasta, kek ve benzeri t\u00fcrde alternatif tatlar e\u015flik eder. Almanya\u2019 da ki\u015fi ba\u015f\u0131na d\u00fc\u015fen y\u0131ll\u0131k bira t\u00fcketimi yakla\u015f\u0131k 107 litredir. Almanya, d\u00fcnyada \u00c7ekler ve \u0130rlandal\u0131lardan sonra en \u00e7ok bira t\u00fcketen \u00fclkelerin ba\u015f\u0131nda gelir. \u00dclkede halen aktif 990 bira \u00fcreticisi firma bulunmaktad\u0131r. 7 bin 503 farkl\u0131 t\u00fcrde bira \u00fcretmektedirler.
